Roselle leaves, also known as gongura, is yummy cooked in the Filipino dish called paksiw na bangus.

In India, they prepare gongura (one and a half cups of the leaves) with dal (half cup), using onion (1 small or half cup, roughly chopped), green chilis (2 to 3 pieces, slit) turmeric (one fourth teaspoon), mustard seeds(one fourth teaspoon), cumin seeds (half teaspoon), curry leaves (7 to 8 pieces) and garlic (2 cloves, crushed) for flavoring.   


Take the dal, chopped leaves, onion, green chilis in a pressure cooker. Add salt to taste, turmeric powder and water. Cover with the lid and let cook for 6 to 7 whistles or until dal is cooked. Stir and crush a bit while stirring. Add water if needed. 


Heat oil in a pan. When hot, add mustard seeds, let them pop. Add cumin seeds, let them sizzle. Add curry leaves and garlic cloves. Pour this on the dal. Stir both together. Ready to serve.
