Soups for a Rainy Day
We love sipping on a cup of warm, hearty soup on rainy days. Something about it just soothes the soul. So we've compiled a list of our monsoon season favorites for you to enjoy while staying safe and dry.
Native Corn Soup
Remove corn from the husk and chops into small pieces. Sautee them with garlic and onions, then add 1 to 2 cups of water. Cook the mixture until the pieces of corn become tender. To top it off, you can add some available greens like sili tops (chili leaves), malunggay, unte, and kulitis.
Kitcheree
Kitcheree is a traditional Indian dish made out of beans, rice, and spices. Although it's not technically a soup, we find at just as comforting. To make, start by cooking brown rice. Once the rice is soft, add monggo (mung beans) or lentils (red, orange or green). Let it cook for a moment, then add some grated or chopped turmeric. Add water if it seems too thick for your liking. Once the lentils are soft, you can add some veggies from your harvest basket like finely chopped collard or kale, grated squash, and carrot. Season the dish with herbs like cumin or fresh basil.
